Cocido Madrileño (Madrid Stew)

Madrid’s stew is one of the most typical dishes in Madrid. It is made mainly with chickpeas stewed with different types of meat, especially pork fat and sausages, as well as some vegetables such as chard, beans, carrots or potatoes.

The way to cook it and serve it is also the object of traditions, which give this nutritious dish an even more “castizo” touch. They usually cook all the ingredients together, but at the time of serving they separate the ingredients in what they call “the three overturns”. First serve the broth of the stew, then the chickpeas and vegetables, and finally all the meats.
